Salted Almond Chia Pudding with Matcha Crème

Chia seeds are nutrient powerhouses. They are full of healthy omega 3's, fiber, antioxidants, calcium and iron. They also contain a decent amount of protein (1 tablespoons contains 2 grams, so from the chia seeds alone in this recipe you will get 10 grams of protein!). Matcha is a green tea originally from Japan that is also high in antioxidants and a healthy alternative to coffee. This breakfast is a healthy balance between healthy fats, proteins and carbs which will keep you satisfied for hours.

Recipe (serves 2) Prep time: 30 minutes Chia pudding 10 tablespoons chia seeds

2 cups almond milk (I used @alpro salted caramel which is sweetened already, so add 1 tbsp of sweetener if you use unsweetened milk)

Method: Divide the chia seeds between two bowls and add 1 cup of milk to each bowl. Stir very well for a few times so that no lumps form. Matcha crème 200 grams silken tofu

1/2 cup soaked cashews

1 tablespoon matcha

2 tablespoons maple syrup

1/2 tsp vanilla extract Method: Simply blend everything together in a blender or food processor until smooth. Store in an glass jar or air thight container. This batch makes more than for 2 bowls so you can use it for several days.

Top the chia pudding with the matcha crème, grilled banana, vanilla yogurt and crunchy toppings of choice such as cacao nibs, seeds and buckwheat.
