Peanut Butter Brownie Mousse Cups

Nutty brownie cups filled with a silky peanut butter mousse, topped with some delicious dark chocolate. All vegan, refined sugar free and oil free. The mousse is naturally sweetened with dates, which taste like caramel. The perfect dessert if you want something indulgent and healthy at the same time.

Recipe (makes 10): Prep time: 30 min

Base

  • 1 cup dates (22 small dates)

  • 1/2 cup brazil nuts

  • 1/2 cup oatmeal

  • 3 tablespoons raw cacao powder

  • pinch of salt

Filling:

  • 200 grams silken tofu

  • 3 tablespoons peanut butter

  • 5 medjool dates (soaked beforehand)

  • 1 teaspoon vanilla extract

  • pinch of salt

  • 1 bar dark chocolate


Method:

  1. In a food processor, blend the ingredients for the base until sticky.

  2. Line 10 muffin/cupcake cups and press the dough into the cups. Place into the freezer.

  3. Blend everything for the filling except the dark chocolate.

  4. Divide the tofu peanut butter mousse between the cups.

  5. Place into the freezer for 2 hours.

  6. Melt the chocolate au bain marie and place about a tablespoon of melted chocolate on top. Place back into the freezer for 10 minutes.

  7. Let the cups thaw for a few minutes before serving.
