Creamy Tikka Masala Lentils

Nothing better then a creamy lentil dish on a cold and rainy day. This is the perfect comfort food for if you are feeling like something healthy and warming. This dish is high in protein due to the lentils, so it will keep you satisfied for hours. Besides its high protein content, lentils are an amazing (and cheap) superfood. They are high in iron, calcium, folic acid and magnesium. So... let's eat some more lentils!
Recipe (serves 3-4 people) Prep time: 35 minutes
2 tablespoons oil
2 garlic cloves
1 thumb ginger
1.5 cup red lentils
3/4 small pumpkin, cubed
2 celery stalks, chopped
Few handfuls of spinach
1 can coconut milk
1 tablespoon vegetable stock
2 tablespoons soy sauce
3 tablespoons tikka masala powder
1/2 teaspoon smoked paprika
1/2 teaspoon turmeric
Fry the onion in a hot pan with the oil for 2-3 minutes.
Add the minced garlic and ginger and cook for another 2-3 minutes.
Add the pumpkin, celery, tikka masala powder, smoked paprika and turmeric. Mix until everything is coated.
Add the lentils, followed by the boiling water and vegetable stock. Make sure that it is just over the top of the lentils. Lower the heat to low/medium heat and cook for 5 minutes and add more water so that it covers the lentils. Now, cook again for 5 minutes.
Add the can of coconut milk, cover the pot and let it simmer for 10-15 minutes until the lentils are creamy.
When they are almost done, add a few handfuls of spinach and close the lid.
Serve with rice, herbs and chili pepper.
