Chocolate Peanut Butter Mousse

Bijgewerkt: 20 aug 2020

This is a silky chocolate mousse made out of tofu and dark chocolate and peanut butter, free from refined sugars. This is a healthy alternative to the conventional chocolate mousse. All you need is a blender or high speed blender to make this recipe.

Recipe (makes 2 glasses): Crust:

· 5 medjool dates

· 1/2 cup sunflower seeds (or any other nut or seed)

· 1/4 cup oatmeal

· 2 tablespoons cacao powder

· 1 teaspoon peanut butter

· pinch of salt

· 400 grams silken tofu

· 100 grams melted dark chocolate

· 1 big tablespoon of peanut butter

· 2 tablespoons cacao powder

· 2 teaspoons maple syrup

· 1 teaspoon vanilla extract

· pinch of salt

1. Blend the crust ingredients together in a food processor.

2. Take 2 glass jars or ramekins and press the dough onto it.

3. Blend the silken tofu with the peanut butter, cacao powder, maple syrup, vanilla extract and salt.

4. While this is blending, slowly pour the dark chocolate into the mixture and let it blend until everything is combined.

5. Divide the mousse between the two jars or ramekins and let it sit for 30 minutes.

6. If you have some dough left, crumble it on top and also drizzle some dark chocolate and peanut butter on top of the mousse.

7. Enjoy!
