Almond Butter Granola

After making my own granola I never (okay, never say never) looked back at store bought granola. Homemade granola is just so much tastier, healthier and cheaper! This delicious nutty granola is full of almonds and coconut, and it is free of refined sugars and oils. You can make this granola gluten free by substituting the oatmeal for gluten free oats. You can also use any other nut butter if you like, but it obviously won't be almond butter granola then ;).

Recipe Prep time: 40 minutes

  • 3 cups rolled oats

  • 1 cup raw almonds

  • 1 cup coconut flakes

  • 1/2 cup maple syrup

  • 1/4 cup almond butter

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

Method:

  • Preheat the oven to 145 degrees Celsius.

  • Combine the oats, almonds, coconut flakes and salt.

  • Stir in the almond butter, maple syrup and vanilla extract.

  • Spread out on baking paper and bake for 30 minutes, stirring every 10 minutes.

  • Let the granola cool down before serving.
